They always say, “you are what you eat,” and it couldn’t be farther from the truth. Our food intake reflects on our health and general well-being, and living a long and prosperous lifestyle can sometimes boil down to the things one eats.

Chef T and Simple Eats has made it his mission to help people learn how to eat with a purpose.

Tito Dudley, more popularly known as Chef T, is a professional chef, award-winning bodybuilder, fitness trainer, nutrition coach, and a cancer survivor. Chef T is the founder and owner of Simple Eats, a health and nutrition platform that helps people live healthier lives by teaching them about proper dieting and exercise.

Tito Dudley is passionate when it comes to teaching others how to truly eat healthier through organic and clean diets, supplements, and safe exercise. Unlike other nutrition experts out there, Tito does not believe in “dieting,” and instead, he teaches people how to eat cleaner by incorporating whole foods, plant-based foods, a substantial amount of animal protein, a minimal amount of dairy and staying away from highly processed foods.

This passion is what led him to create Simple Eats by Chef T is a platform that aims to be an “everyday guide to the modern approach on cooking, shopping, conscious restaurant choices, kid’s choices, selective recipes.” Seeing that food is essential to people’s daily lives, Simple Eats is trying to change the future of how people approach food by giving them knowledge and tools that will help people make healthier decisions about their diet.

Being a chef, nutritionist, and a cancer survivor himself, Tito Dudley is someone who knows how important it is for people to eat with a purpose. At age 15, the young Tito’s life was changed when he woke up one day with a lump on his neck. After checking with the doctor, Tito was diagnosed with Hodgkin’s Disease, a form of lymph node cancer. While the diagnosis came as a shock to him, he was able to use it as a form of motivation to help change his lifestyle to a healthier one. Along with exercise, Tito also consulted with a nutritionist, who gave him natural supplements that helped with his healing. Thanks to a healthier eating regimen accompanying his biweekly chemo treatments, he was able to beat cancer in just six months.

After battling and overcoming his cancer diagnosis, Tito Dudley fully continued his healthy eating habits and started to dabble in bodybuilding. Tito Dudley was able to achieve success in the bodybuilding circuit, winning multiple awards in his prolific career.

Having a passion for healthy eating eventually lead Tito Dudley to the culinary world, marking the origins of Chef T. After graduating from the Natural Gourmet School in New York City, Chef T was able to work with some amazing organizations, including The JCC in Manhattan, First Descents, The Palette Foundation (a premier sushi restaurant), a Danish restaurant called Aamann Copenhagen, Tu Lu’s Bakery, and many clients in the entertainment and financial industry.

A cancer survivor whose life has been changed by eating healthier, Tito Dudley is a first-hand witness of the power of a healthy diet. Ultimately, Chef T aims to make the world a better place for everyone, starting with the tables in their meals.
